Detection and sorting
of the wooden breast defect
The detection of contaminants and dangerous diseases on food is a relevant part of every food processing procedure and is part of HACCP hygiene management. With the EVK Helios camera and the EVK SQALAR software package, a solution to these measurement problems can be realized and at the same time the output of the material can be controlled. The “wooden breast” defect is a practical example from the food industry, adjacent to HACCP principles.
Problem
The “Wooden breast” defect is a growth defect in the breast muscles of chickens that occurs during fattening and is not dangerous for the consumer, but makes the meat unsuitable for sale to humans. This growth defect causes several billion euros of damage in the food processing industry, as the affected meat firstly has to be sorted out manually and secondly is only processed into inferior goods, which represents a significant reduction in achievable margins.
Solution
Detection is not possible a priori either via color cameras or via the direct correlation of NIR spectra to good and bad products, as many chemometrically detectable differences do not correlate to the defect itself, but represent natural variations with no reference to quality.To solve this challenging problem, a completely new, much more comprehensive approach is therefore required in which a large number of different chemometrically detectable properties are quantitatively measured and combined in a logic in such a way that a clear identification of the defect is possible.
